1. Passion Fruit Pulp

We’ll start off with this one since passion fruit pulp, or pulpa de maracuyais the base for most recipes in this list.

Also, it’s the easiest, since you only need about three to four pieces of the fruit to get 3/4 cup of the pulp.

That’s right. You only need the fruit itself, which you then strain over a fine-mesh sieve to get the pulp.

Or you can simply buy passion fruit pulp ready made.

You can enjoy it as is, or use it for the other passion fruit dessert recipes we’ve enumerated here.

You can even make your own smoothie using the pulp for a quick energy boost!

2. Salsa de Maracuya (Passion Fruit Sauce)

This is a versatile sauce you can use for both desserts and savory dishes.

To make the sauce for passion fruit desserts, follow these steps:

1. In a medium saucepan, combine 3/4 cup of passion fruit pulp with ½ cup of sugar (more for a sweeter sauce). Add one tablespoon of lime juice. Boil the mixture over medium-low heat.

2. Let the sauce simmer for about five more minutes until it has thickened enough.

3. Remove from the heat and let cool before serving.

You can use this sauce as a base for the other best passion fruit recipes, such as passion fruit mousse.

If you want a more savory, spiced sauce, mix in 1/4 cup of vinegar, minced garlic, salt, and pepper.

This garlicky sauce goes well with grilled chicken and even works great as a salad dressing.

3. Mousse de Maracuja (Passion Fruit Mousse)

Another mouthwatering recipe with passion fruit, mousse de maracuya is a summer dessert.

It’s especially delish with a garnishing of coconut and macadamia nuts.

As with all types of mousse though, making passion fruit mousse comes with multiple steps.

We’ll break this down to make it easier for you.

Don’t worry as this is one of the best Brazilian desserts that’s worth the time and effort!

Gelatinized Fruit Mixture

1. Take the pulp of three to four fresh, ripe passion fruits. You should have at least 3/4 cup of pulp.

2. Dissolve the pulp on low heat just until it becomes more liquid. Make sure it doesn’t boil!

3. Use a fine-mesh sieve to strain the juice. Set the liquid aside and let cool.

4. In a separate bowl, mix one tablespoon of unflavored gelatin with 1/4 cup of water. Microwave this for 15 seconds, stirring until the gelatin is completely dissolved.

5. Combine the gelatin plus two tablespoons of orange liqueur or rum to the passion fruit juice. Chill in the fridge for half an hour, stirring it every 10 minutes or so.

The Meringue

1. Combine 1/3 cup of sugar with 1/4 cup of water and bring to a boil. Wait until the syrup reaches 250 °F before taking off the heat.

2. Using your electric mixer, beat three egg whites until they form soft peaks.

3. Slowly add the syrup to the egg whites in very thin streams. It’s best to let the sugar run down the bowl’s side. Continue to run the mixer as you add the syrup until the egg whites create stiff peaks.

The Mousse

1. Using a bigger mixing bowl, beat one cup of whipping cream until you get soft peaks.

2. Carefully fold in your gelatinized passion fruit mixture into your meringue. Make sure not to over mix it.

3. Take about 1/4 cup of the passion fruit mix and gently mix it into the whipped cream. This’ll make it easier to add the rest of the meringue while keeping it airy and fluffy.

4. Get your best-looking serving bowls and spoon some of the mousse into them. Chill in the fridge until the mousse has set.

Once you’re ready to enjoy the mousse, garnish with fresh fruit and some more whipped cream.

You can also sprinkle some coconut and chopped macadamia nuts on some of them.

4. Passion Fruit Filling for Tarta de Maracuya (Passion Fruit Tart)

The great thing about passion fruit filling is that you can use it for a variety of desserts.

Aside from tarts, you can also use it as a filling for pies.

If you’re up for some of the most delicious empanadas, you can substitute apples with passion fruit filling.

1. In a large saucepan, combine one cup of passion fruit pulp (seedless) with the zest and juice of one lemon. Add about 12 ounces (350 grams) of caster sugar, six whole eggs, and nine egg yolks. Gently mix all ingredients together.

2. Place the saucepan over very low heat. It’s best to use a whisk to incorporate everything together, but take your time during mixing. Continue whisking gently until the sauce is thick enough that it coats the back of a wooden spoon.

3. Remove from the heat and allow the filling to cool. Once completely cool, add 10 ounces (300 grams) of unsalted butter. Mix well to prevent ending up with a greasy filling.

You can use this as a filling for a delectable passion fruit tart. You can make your own tart crust or use 300 grams of chilled shortcrust pastry.

Pro tip: Serve your tart with Cuban coffee as this goes really well with baked sweets!
